Ultrasonic extraction is a well-established technology that efficiently extracts flavor compounds, polyphenols, and bioactive components from plant materials. Cold-brewed tea offers numerous advantages, preserving a higher proportion of heat-sensitive bioactive compounds while delivering a smoother, more refined flavor profile. As a non-thermal extraction method, ultrasonic treatment enhances extraction and infusion without causing degradation of sensitive biomolecules. Using FYCG's ultrasonic extraction systems, cold-brewed tea and herbal teas can be prepared quickly.
The Benefits of Ultrasonic Cold-Brewed Tea
Tea is a common beverage typically brewed by pouring hot or boiling water over roasted tea leaves. Cold brewing refers to the process of steeping tea leaves in room-temperature or cold water for an extended period (approximately 10–15 hours). To make cold-brewed tea, simply place loose tea (or tea bags) in cold water and let it sit for several hours. This method is very time-consuming and often fails to fully extract the tea's components. The ultrasonic cold-brewing method significantly accelerates the extraction process, fully transferring the tea's components-such as caffeine, polyphenols, and catechins-into the water. Since it does not involve brewing with boiling water, the ultrasonic cold-brewing method yields a richer, more mellow flavor.
Why choose ultrasonic cold brew?
● Non-thermal extraction
● Prevents the degradation of temperature-sensitive biomolecules
● More effectively extracts aromatic compounds and glycoside precursors
● Less bitterness
Ultrasonic extraction is a non-thermal process and is therefore widely used to extract polyphenols (such as catechins) from tea leaves. Ultrasound can improve extraction efficiency at lower temperatures, thereby preventing the degradation of beneficial components. High-temperature extraction often leads to the degradation of polyphenols and increases the extraction of proteins and pectins, which can affect the sensory quality of tea by forming a cloudy layer. Ultrasonic-assisted cold extraction can be performed at low temperatures, preventing the evaporation of volatile components and the degradation of temperature-sensitive biomolecules (such as antioxidants), thereby producing tea beverages with superior sensory quality.
Studies have also shown that, compared to traditional boiling water extraction, the ultrasonic method yields higher polysaccharide extraction rates. Like antioxidants, polysaccharides offer health benefits, including hypoglycemic, anti-HIV, anticancer, anticoagulant, anti-radiation, and liver-protective effects.
Cold-brewed tea
Although most teas are brewed with (boiling) hot water, room-temperature or chilled water can also be used to extract the tea liquor from the leaves. This method requires a longer steeping time to extract the active compounds and flavors. Ultrasound is an ideal tool for enhancing the extraction of key components and accelerating this process. In addition to achieving a more thorough extraction in a very short time, ultrasonic cold brewing also yields distinctly different flavor profiles.
Advantages of the Ultrasonic Cold Brew Process
Compared to hot water infusion, traditional cold brewing has some drawbacks. In the traditional cold brewing process, fewer active compounds (such as catechins, polyphenols, and caffeine) are extracted, which means the tea's nutritional and health benefits are not fully realized.
